After receiving many requests we posting recipe of quick simple home chocolate making - all you need is Cacao beans, cream and sugar. Later on next choco-creations you can add sea salt & chili, various nuts and dry berries, dates and anything else you want. This is "Classic" - how we made it that very first time. Stage-1: roast & peel the beans Take any hot pan with thick bottom to avoid the burn and stir the dry fermented beans (or as how you get them) on a low fire until the first crack sounds. You'll smell the aroma as well. Beans are roasted and ready to peel! Its easy to peel the Cacao beans while its hot, and getting harder when beans going cooler. Don't throw away the husk of cocoa - its full of benefits, as was recently re-proved by Takashi Ooshima from Osaka University. Stage-2: grind the beans, prepare the syrup You can use home grinder from blender if you don't have anything more dedicated to Cacao, but do it in a few times - beans extracting the oil and its can stuck the motor - so you need to open to mix them and grind again into Cacao paste. Please note that your paste made this way will not be same consistence as made with Pro-equipment, what is even better for real lovers of organic chocolate. At same time put the cream (its can be coconut cream) with preferred sugar on a low fire and stir it until sugar will fully dissolved. Boil the syrup until it will have a nice golden color. Stage-3: add Cacao paste to syrup Add paste, turn off the fire and sir the chocolate thoroughly. Put it into beautiful cups - its ready! Keep in refrigerator for weeks, or in cool dry place - for 3-4 days.
PROPORTIONS: try 1-1-1, or equal part of beans, sugar and cream. Taste it when ready to improve your own proportions.

More cacao plants in South Thailand - the ReturnDream-Plan #7 - Upon the returning to Phangan island we were informed about large fields of cacao trees on Samui 40 years ago. Father of good man we've met was growing it and collected the harvest for years, until changed them to more valuable tree culture on that time. Now we going to plant new cacao with the family and treat them with delicious chocolate to build the long-lasting aim. Our young plants here looking almost as a trees - you can meet them in a few areas of the island, while the major amount is at Khao Tam area. The farm located in next sub-district from us and looks deserted for quite a while. Many wonderful cocoa trees growing here without any care, and nobody picking the fruits during the season. Farm owners working somewhere all day and don't know how to prepare the beans and make the chocolate. Probably, same as their neighbors, they will cut down the cocoa trees one day to plant Durian seedlings. If we'll not behave in a right direction before that.

The fruits are collected 2 crops a year. Main autumn harvest richer than the second in spring.
